Pineapple Banana Loaf 1/3 cup shortening or butter
1 1/4 cups sugar 3 eggs 1/4 cup sour cream 2 cups mashed banana (about 4) 1 3/4 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 cup diced, candied pineapple (red, green and yellow) Cream shortening, sugar and eggs on medium speed of electric mixer until light. Add sour cream and mashed bananas; mix well. Combine flour, baking powder, baking soda, salt and candied pineapple. Mix to coat fruits thoroughly. Stir into creamed mixture; mix well. Turn batter into greased 9 by 5 inch loaf pan. Bake at 325 degrees for 75 to 85 minutes, or until toothpick inserted in center comes out clean. Cover with foil if it browns too quickly. Cool 10 minutes; remove from pan and cool completely. Freezes well. Makes a good substitute for those who do not like fruitcake. Enjoy.
