Sweet Potato Biscuits 2 cups self-rising flour
1/8 teaspoon salt 1/2 cup oil 1 cup mashed sweet potatoes 4 to 5 tablespoons skim milk Heat oven to 450 degrees. Spray cookie sheet with nonstick spray; set aside. Combine flour and salt. Cut in oil and mashed potatoes until coarse crumbs form. Stir in just enough milk to make dough cling together. Knead slightly on floured surface. Roll out to 1/2 inch thickness. Cut with 2 inch biscuit cutter. Place biscuits on cookie sheet. Bake for 12 minutes. If desired, freeze in freezer bags; thaw as needed. Makes 1 1/2 dozen.
