BUTTERSCOTCH SWEET POTATO CASSEROLE
Use 3 cups sweet potatoes that have been boiled, drained and mashed. Add: 1 1/2 c. sugar 3 eggs 1/2 stick butter 1/2 c. milk 1 (3 oz.) box instant butterscotch pudding Place in casserole; bake at 325 degrees until nearly firm in center. This could also be baked in an unbaked pie shell. Enjoy.
