Barbecued Pork Chops

8 (5 ounce) center-cut pork chops, 1/2 inch thick

1/4 teaspoon pepper

1/2 cup thick-and-spicy honey barbecue sauce

1 (14 1/2 ounce) can no-salt-added stewed tomatoes

1 (10 ounce) package frozen vegetable blend

Trim fat from pork chops, and then sprinkle with pepper. Spray a large
nonstick skillet with cooking spray. Set stove burner to medium-high. When
the pan is hot, add pork chops in a single layer. Do not crowd the pan or
the chops will not brown quickly. Brown on both sides. Spray interior of 4
quart slow cooker with cooking spray. Place a layer of pork chops in the
slow cooker. While the chops are browning, combine barbecue sauce, tomatoes
and frozen vegetable blend in a bowl, stirring well. Pour some of the
mixture over the first layer of chops. When you have added the rest of the
chops, pour the rest of the sauce with vegetables over top. Cover; cook on
high for 1 hour. Reduce heat to low and cook for 6 to 7 hours, or until meat
is tender but not dry.
