Carolina Pot Roast

3 medium-large sweet potatoes, peeled and cut into 1 inch chunks

1/2 cup brown sugar

1 pound pork roast

Scant 1/4 teaspoon cumin

Salt to taste

Water

Place sweet potatoes in bottom of 3 quart slow cooker. Sprinkle brown sugar
over potatoes. Heat nonstick sskillet over medium-high heat. Add roast and
brown on all sides. Sprinkle meat with cumin and salt while browning. Place
pork on top of potatoes. Add an inch of water to the cooker, being careful
not to wash the seasonings off of the meat. Cover; cook on low for 3 hours,
or until meat and potatoes are tender but not dry or mushy.
