Curried Sausage, Chicken & Rice Skillet -
6 oz. (1/2 of 12-oz. pkg.) OSCAR MAYER Natural Uncured Beef Sausage,
thinly sliced
2 boneless skinless chicken thighs (1/2 lb.), cut into bite-size pieces
1 onion, thinly sliced
1 Tbsp. finely chopped fresh gingerroot
1 cup fat-free reduced-sodium chicken broth
1 cup lite coconut milk
2 tsp. curry powder
1-1/2 cups instant white rice, uncooked
1-1/2 cups small broccoli florets
Cook sausage, chicken, onions and ginger in large nonstick skillet on
medium-high heat 5 min. or until chicken is no longer pink, stirring
occasionally.
Add broth, coconut milk and curry; mix well. Bring to boil, stirring
occasionally.
Stir in rice; top with broccoli. Cover; simmer on low heat 5 min. or
until most the liquid is absorbed. Stir before serving.
