The countertop space isn't the issue. I like the small ones as if I'm just 
cooking for myself it is much easier to clean up. thanks

One of those smaller models oughtn't be necessary unless real counter top space 
is an issue.  I had the models with the single knob on them and how I handled 
grilling was to always set the knob to maximum cooking time.  I let the grill 
do its heating then put the food on the grill.  I used a talking clock to 
handle cooking time then switched the power off for the grill on the power 
strip into which it was plugged and took my food off the grill.  I never had 
any problems with getting wrong times for cooking that way, but for me that did 
require some form of talking clock and doing time calculations at start of 
cooking.
