Key Lime Muffins

2 cups all-purpose flour

1 cup sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup milk

2 eggs, beaten

1/4 cup oil

1 teaspoon grated lime rind

1/4 cup plus 2 tablespoons lime juice

Sift together flour, sugar, baking powder and salt; set aside. Mix together
remaining ingredients; add all at once to dry ingredients. Stir lightly with
fork just until moistened. Batter will be lumpy. Spoon into greased muffin
cups, filling three-fourths full. Bake at 400 degrees for 20 minutes.
