Pumpkin Muffins 1/4 cup vegetable oil
1/2 cup plain yogurt 3/4 cup sugar 2 eggs 3/4 cup canned pumpkin 2 cups all-purpose flour 1/4 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 1 teaspoon cinnamon 1/4 teaspoon ginger 1/8 teaspoon cloves Combine oil, yogurt, sugar and eggs; mix well, blend in pumpkin. Add remaining ingredients; mix until well-blended. Spoon mixture into paper-lined microwave muffin pan, filling cups two-thirds full. Microwave on high, 6 muffins at a time, uncovered, for 2 to 2 1/2 minutes; rotate pan if needed. Continue with remaining batter. Makes 18 muffins.
