I used to have a recipe for roasted veggies but have no idea where it is now. But best I can remember, I put a little olive oil in a bowl with whatever seasonings I wanted and rolled all the veggies around in there. Then I put the veggies in a sprayed pan and had them in a single layer. I cooked them at 350 or so I think but can't remember for exactly how long. I remember that they were quite good. I tried potatoes, broccoli, green beans, and such. I remember the recipe because I didn't roast a lot of the ones they mentioned--like zucchini, different kinds of squash, etc. My family didn't like most of the veggies in there so I had to revise it for our tastes.
