SOFT AND CHEWY PEANUT BUTTER COOKIES 

 

2 c. flour

1/2 tsp. baking soda

1/4 tsp. salt

1 1/4 c. dark brown sugar, firmly packed

1 1/4 c. white sugar

1 c. (2 sticks)butter, softened

3 lg. eggs

1 c. creamy peanut butter

2 tsp. vanilla extract

 

Preheat oven to 350 degrees. Combine flour, soda and salt, mix well, set
aside. In a large bowl, blend sugars and butter to form a paste. Add eggs,
peanut

butter and vanilla, mix well. Add flour mixture and mix until combined. DO
NOT OVER MIX!

 

Drop by teaspoonfuls onto ungreased cookie sheet, 1 1/2 inches apart. With a
wet fork gently press down into cookies to form a crisscross pattern. Bake

18-22 minutes or until cookie are slightly brown along edges. Transfer
cookies to cool surface immediately.

 

Variation: Add 2 cups coarsely chopped chocolate bar or 2 cups chocolate
chips to flour mixture.  Enjoy.  Marilyn
