Onion-Smothered Pork Chops
Serves four. ready in: 30-60 minutes. ingredients 4 center cut pork chops (about 3/4 to 1 inch thick) 1 teaspoon table salt 1/2 teaspoon black pepper 1/2 teaspoon powdered garlic 1/4 teaspoon paprika 1/2 cup (more if needed) self rising flour 1/2 cup peanut or vegetable oil 2 Vidalia or sweet onions, trimmed, peeled, sliced additional water or half and half, if desired directions Season pork chops with salt, pepper, garlic powder, paprika. Coat thoroughly with flour. Lay aside. Heat oil in heavy skillet until a couple of drops of water sizzles when placed in the pan. Coat chops again with flour and gently place in hot oil over medium-high heat. Brown on each side -- about 3 minutes per side. Remove to rack to drain and set aside. Add sliced onions to pan drippings and cook for 2 minutes. Add remaining flour and continue stirring until onions and flour are golden brown. Do NOT overcook! Add 2 cups water and bring to a boil. Stir until well mixed. Return chops to gravy and cover skillet. Reduce heat and simmer for about 25 minutes or until gravy is thick and pork chops are very tender.
