This has always been my favorite no bake cookie. It brings back fond memories 
of childhood so is a simple recipe to make when I feel like pampering myself a 
bit. Thanks for the reminder.  Also in a pinch, these are good for potluck 
desserts. They always seem to disappear quickly.

2 c. sugar
1/2 c. milk
1 stick butter
4 tbsp. cocoa
2 1/2 c. Quick oats
1/4 c. chopped nuts, pecans or walnuts
2 tsp. vanilla
1/2 c. peanut butter

Cook sugar, milk, butter and cocoa for 1 1/2 minutes. Start time count when the 
mixture has reached a full boiling point. Remove from heat and add oats, nuts, 
vanilla and peanut butter. Beat until well blended. Spoon onto foil with a 
tablespoon in a cookie form. Will harden and are delicious. You may use crunchy 
peanut butter and omit the nuts.
