RICE-SWEET POTATO TREAT
1 c. cooked rice 3 c. cooked sweet potatoes, mashed 1/2 tsp. salt 1 c. sugar 2 eggs, beaten 1/2 c. milk 1/2 tsp. vanilla Mix rice, potatoes, sugar, salt, eggs, softened butter, milk, and vanilla. Pour into a 2-quart casserole. Add the following topping: 1/2 c. chopped pecans 1 c. brown sugar 1/3 stick butter 1/3 c. plain flour Combine brown sugar and flour; add melted butter and mix. Add nuts and Rice Krispies. Spread over sweet potato mixture. Bake at 350 degrees for 35 minutes.
