Bacon Swiss Squares
These scrumptious squares are kind of like quiche you can eat with your hands. Perfect for brunch. Throw a fried egg on top of the leftovers for an easy, cheesy breakfast. Serves eight. ready in: under 30 minutes. ingredients 2 cups baking mix (such as bisquick) 1/2 cup cold water 8 ounces sliced Swiss cheese 1 pound sliced thick bacon, cooked and crumbled (you can also use ham) 1 onion, sliced 4 eggs, lightly beaten 1/4 cup milk directions In a bowl, combine the baking mix and water; stir 20 strokes. Turn onto a floured surface; knead 10 times. Roll into a 14" x 10" rectangle. Place onto the bottom and 1/2" up the sides of a 13" x 9" x 2" baking dish. Arrange cheese over dough. Sprinkle with bacon and onions. In a bowl, whisk eggs and milk. Pour over bacon. Bake at 425 degrees F for 15-18 minutes or until a knife inserted near the center comes out clean.
