Hot German Potato Salad

6 cups peeled potatoes, cut in to 1/4 inch slices (about 2 lbs.)
1 cup chopped onion
1 cup chopped celery
1 cup water
2/3 cup cider vinegar
1/4 cup sugar
2 Tbsp. quick-cooking tapioca
1 Tsp. salt
3/4 Tsp. celery seed
1/4 Tsp. pepper
6 slices bacon, crisp-cooked, drained and crumbled
1/4 cup snipped fresh parsley.

In a 3-1/2 or 4 quart slow cooker, combine potatoes, onions and celery.
Combine water, vinegar, sugar, tapioca, salt, celery seed and pepper in a
bowl.
Pour over potatoes.  
Cover, cook on low for 8-10hours or on high for 4-5 hours.
Stir in bacon and parsley.
Makes 8 servings.
