Artichoke Dip Potato Skins

Serving Size: 2 potato skins

Ingredients

Nonstick cooking spray

10 baby red potatoes

1 (9-ounce package frozen chopped spinach, thawed and well drained

1 1/2 cups artichoke hearts, drained and chopped

1/2 cup shredded part-skim mozzarella cheese

1/3 cup whipped cream cheese

*Sugar's Note: I like the low-fat or fat-free Cream cheese

1 Tablespoon grated Parmesan cheese

1 Tablespoon finely chopped onion

1/5 teaspoon garlic powder

*Sugar's Note, I use 1/4 teaspoon or to taste since I don't have a 1/5
teaspoon.



Directions

1. Preheat the oven to 375° F.

Coat a rimmed baking sheet with cooking spray.

*Sugar's Note, I use a cookie sheet.

Place the potatoes on the baking sheet and pierce them all over with a fork.

2. Bake for 40 to 45 minutes, or until they’re tender.

Let the potatoes stand until cool enough to handle, then cut each in half
lengthwise.

Carefully scoop out the insides, leaving about 1/8-inch-thick shells.

*Sugar's Note, I use a spoon to do this.

Save the potato insides for another use, or discard.

3. In a medium bowl, combine the remaining ingredients to make the spinach
mixture.

4. Turn the oven temperature to broil. Broil the empty potato skins for 4 to
6 minutes, or until edges are brown.

Spoon the spinach mixture evenly into the skins.

Broil for 3 to 4 minutes, or until warmed through and beginning to brown.

Serve warm.



*Sugar's Note, I've not used my broiler for this. I just use my oven and
they come out great!
