Doughnut Muffins
¼ Cup vegetable oil 1/4Cup softened butter ½ Cup granulated sugar 1/3 Cup brown sugar 2 large eggs 1 1/2 teaspoons baking powder ¼ teaspoon baking soda 1 teaspoon nutmeg ¼ teaspoon salt 1 teaspoon vanilla 2 2/3 Cups flour 1 Cup milk Preheat oven to 425 degrees. Spray liners with non stick spray to ensure the muffins release easily. In a bowl cream butter, oil and sugars. Add eggs, beating to combine. Mix in salt, baking powder, and baking soda. Add flour alternately with milk, beginning and ending with flour. Spoon into prepared muffin pan and bake 15-17 minutes or until a tooth pick inserted in center comes out clean. Brush with melted butter and cinnamon sugar.
