Apricot & Cranberry Couscous Cereal

Oatmeal doesn't completely have the hot cereal market cornered.

Prep: 5 min. Total: 35 min. Yield: Serves 4.

2 cups apricot nectar
1/4 cup dried apricots, diced
1/4 cup dried cranberries
1/2 tsp. ground allspice
1 cup quick-cooking couscous
Low-fat milk or cream
Brown sugar or cinnamon

Close the lid and press the Steam/Cook button to preheat the AromaR rice
cooker for approximately 10 minutes. Open the lid, using caution to avoid
steam burns. Combine the nectar, dried apricots, cranberries, allspice and
couscous together in the inner pot of the AromaR rice cooker and close the
lid. Cook for about 20 minutes, just until the ingredients come to a boil.
Let the cereal stand for 5 minutes, then serve in individual bowls. Add milk
or cream, if desired. Top with brown sugar or cinnamon.  Enjoy.
