Keto Waffles

My note I am going to try adding some  coco powder and berries.  You can 
experiment.  Also I taste the badder to make sure it is sweet enough enjoy. 

 

INGREDIENTS

4 large eggs, separated 

2 c. almond flour 

1/4 c.  granulated Swerve  or Stevia

2 tsp. baking powder 

1 tsp. kosher salt 

1/2 c.  (1 stick) butter, plus more for serving 

1/2 c. almond butter 

2 tsp. pure vanilla extract 

Cooking spray 

Sugar-free maple syrup, for serving 

 

DIRECTIONS

1.     Step One:  Preheat waffle iron to high. In a large bowl, whisk almond 
flour, stevia, baking powder, and salt until combined. 

2.    Step Two:  In a small microwave-safe bowl, melt butter and almond butter, 
stirring every 15 seconds. Stir melted butter mixture into dry ingredients 
until combined, then stir in yolks and vanilla. 

3.    Step Three: In another large bowl, using a hand mixer, beat egg whites to 
stiff peaks. Fold whites into batter until just combined.

4.   Step Four:  Grease waffle iron with cooking spray then pour half of the 
batter into the waffle iron and cook until light golden, about 5 minutes. 
Remove to a plate and repeat with the remaining batter.

5.    Step Five: Top with a pat of butter and maple syrup.​

This recipe is for two waffles.
