Zucchini Parmesan Crisps 1 pound zucchini (about 2 medium-size zucchini) 1/4 heaping cup shredded Parmesan cheese 1/4 heaping cup breadcrumbs 1 tablespoon melted butter 1/4 teaspoon kosher salt Preheat oven to 400 degrees. Line two baking sheets with foil and grease lightly. Slice zucchini into 1/4-inch-thick rounds. Dip rounds in butter, coating well. In a large bowl or plate, combine breadcrumbs, Parmesan and salt. Place rounds in breadcrumb mixture, coating both sides of each round, pressing to adhere. Place rounds in a single layer on baking sheets. Sprinkle any remaining breadcrumb mixture over the rounds. Bake for about 22 to 25 minutes.
