This one is super simple. Put a liner in your crock pot. Cube up a one pound block of Velveeta or other similar product. Pour in a can of Ro-Tel, a tomato and peppers product, or similar. Turn the crock on and cover and leave it alone for an hour or so. Serve with Fritos, tortilla chips, or whatever else you think would be better with cheese on it. For a variation, put a pound of cooked ground beef or breakfast sausage, or even crumbled up chorizo, into it.
