Today's Meat Loaf 1 1/2 pounds lean round steak, all visible fat removed, ground
3/4 cup whole wheat bread crumbs 1/3 cup nonfat milk 1 teaspoon butter or margarine 1 small onion, finely chopped 1/2 green pepper, finely chopped 1 tablespoon water 2 tablespoons minced parsley 1/4 teaspoon dried thyme 1/4 teaspoon sage leaves 1 tablespoon ketchup 1/4 teaspoon salt 2 egg whites 2 bay leaves Soak bread crumbs in milk. Do not squeeze dry. Mix into ground meat. In skillet, saute onion and green pepper in butter. Add water. Cover; steam for about 5 minutes until softened. Add parsley, thyme, sage, ketchup, salt, pepper and egg whites; mix well until thoroughly combined. Shape into a 4 by 9 inch loaf. Press bay leaves on top of loaf. Place on a rack in shallow pan. Bake at 350 degrees for 1 hour and 15 minutes. Internal temperature should read 160 degrees. Remove bay leaves. Makes 4 to 5 servings. Enjoy.
