BRAN MUFFINS 1 (15-oz) box Raisin Bran
5 cups flour 1½ cups sugar 2 tsp salt 2 tbsp baking soda 3 tbsp cinnamon 2 tbsp nutmeg Zest of one large orange 4 eggs, beaten 1 cup vegetable oil 1 qt buttermilk ½ cup raisins ½ cup dried cranberries or cherries 1 cup chopped dates 12 chopped prunes 12 chopped dried apricots 1 cup chopped walnuts These bran muffins are delicious. The batter will keep for up to six weeks in the fridge, so you can make them in small batches as you want them. Mix dry ingredients. In a separate bowl, mix wet ingredients. Blend the two together and then fold in dried fruit and nuts. Bake at 350°F for 20 minutes. Makes 3 dozen, perfect for a brunch-time potluck. Enjoy.
