I like this recipe, and I'll let you know how it turns out when I try it.

hash brown casserole

2 pounds hash browns
half cup melted butter
half cup chopped onion
1 can cream of chicken soup
1 cup sour cream
1 cup milk
2 cups grated cheddar cheese
salt
pepper

preheat oven to 350
combine all ingredients in large bowl keep half cup of cheese out for topping
place in greased 9 by 13 casserole dish
top with reserve cheese
bake for 45 to 50 minutes or until hot and bubbly

can mix up and chill and cover night before, top with reserve cheese just 
before baking

Note: be careful if you chill before baking. Even Pyrex dishes can break when 
going from refrigerator to hot oven.
