Julia, could I ask how you determined that Letitia Marshall was an innkeeper? 
Here's why I ask: I have been searching (unsuccessfully) for the ancestors of 
my Richard Crozier (b. 1810 Co. Tyrone, we think Kilskeery Parish but can't 
verify) who arrived in Ontario, Canada about 1833 or so (again, assumed based 
on a whole lot of factors). He opened the first hotel in Erin, Ontario in 1836. 
So. . . .he would have been about 26 at the time, so what did he know about 
hotel-keeping, I am wondering? Could his family have been hotel-keepers in Co. 
Tyrone? Since I do not know his parents' names, and we cannot find a baptismal 
/ birth registration for him (apparently, many of the Kilskeery Parish records 
have been lost / destroyed), I cannot trace him through his parents -- so I 
think that perhaps the tack to take would be to find some sort of a list of all 
the innkeepers. 

So my real question is: how would one find the innkeepers of County Tyrone, in 
the 1810 to 1830 time period? 

If I tell you that a cousin and I have built an Ancestry database of over 
30,000 entries, and that she and/or I also have done DNA testing with Ancestry, 
FTDNA, MyHeritage, 23AndMe -- and that I've done the Tracing your Ancestors 
course with the Ulster Historical Foundation in Belfast -- you'll know that 
we've been on a serious hunt for these people for a long time!! 

Any thoughts / help would be welcome!
