I can't tell you anything with a great deal of accuracy because my coupe 
has peddles, but I'll through in my two cents worth.

The earlier "Ercoupe" has no peddles.  The rudder and ailerons are linked 
together so that a turn of the steering wheel moves both the rudder and
the 
ailerons at the same time.  This coordination of rudder and aileron 
movements makes the plane easy to fly and requires no independent steering

by pushing rudder peddles.  Several people without legs have owned and 
flown ercoupes.  There is a brake peddle in the ercoupe,  but I presume it

can be retrofited with a hand brake since people w/o legs also have
brakes.  
In addition, at least on my Alon, the braking mechanism is pretty simple 
and looks like it could be retrofitted to a hand brake mechanism.  I think

there was a posting on the couper email list about a gentleman in Florida 
interested in flying a coupe because peddles were not required and he was 
unable to use his legs.  Perhaps he will write to you also.  Good luck.  
You will find the ercoupe a perfect plane for flying w/o legs.
