Chances are, any 'coupe that has its airworthiness certificate changed to a different type (Experimental or Sport) would need to hire the services of a Designated Airworthiness Representative (DAR), who will review all the maintenance records and parts on the plane with a "fine tooth comb", and which would likely be very difficult on a +50 year old airframe, pass that records/parts inspection, and then, for maybe $500 or $1000 and pristine maintenance records, you can regain a Normal Airworthiness Certificate. 
 
I can tell you (from personal experience going Experimental, Research and Development with other, newer, large aircraft) it would surely be no small task and there would very likely be a number of "illegal" items that the DAR will uncover that would need to be corrected before the new certificate would be granted.  It could easily cost the value of a 'coupe. 
 
Nothing is impossible, as long as the money is available to correct the inevitable problems encountered.

I cannot find one subject I thought I had saved. I remember reading, that if one changed a normal category airplane to sport pilot category, it would be next to impossible to change it back to normal category.
I must have deleted it rather than saved it. So I do not have it in writing to back up my above statement.

The certified gross weight comes from the type certificate.  Can a __Supplemental__ Type Certificate change the __certified__ gross weight to conform with the Sport Plane category?

 

Could the STC specify that the plane, only when flown within 1232 lb. can be flown in the Sport Plane category by a “Sport Pilot” and if flown over that weight can be flown in the Normal category?

Wouldn't altering the wing tanks change the actual weight  and useful weight
but not  change the certified maximuim gross weight? I've always believed
that the certified gross weight was what it was... and couldn't be changed.
Am I missing something?
