   Hope you are enjoying your new coupe!!!   On your
new top, I think you need to run a oil sample, they
are just $13. and it will tell you if you have a
problem on the inside of your engine occurring,
causing the high oil temp.  Maybe this is not your
trouble, hope it is not, but there has to be a reason
for the old owners to make the top on your engine. 
The oil sample will show if one of the cam lobes
(exhaust valve) may be eating itsself up.  This is
caused from a airplane setting for a long time and the
lifter bodies getting rust pits, then the cam will
start grinding the pits.  I hope this is not your
problem, but the oil sample will tell you, and could
save you lots of money.

Have a nice DAY;
   I feel the best way to run a new engine is to fly
it at about 3000 feet over an airport for about 2 to 3
hours at cruise power.
