I think you will find that a 415-C will perform very nicely as long as you
keep it at the 1250 pound gross weight. You live in a lower elevation and
cooler area and should do just fine. Please keep in mind that it is not a
big deal to upgrade a C-75 to C-85 with the 85 hp. You just need to make a
jet change in the carburetor and have the correct propeller on it. In many
cases the prop you have may be right or may only need to be repitched a
little (this can be done for around $ 100). If it is a good quality Coupe
it will do just fine.

If you later find the need to upgrade to the 85 hp. and make it a 415-D
with the 1400 gross weight then you may want a climb prop to be
comfortable
and if you do not plan to do a lot of long cross country work a climb prop
is probably a good idea.

Let us know how you come out.
