In Outlook 2003, when you're showing an IMAP folder, you can go to
View > Arrange By > Current View and choose "Hide Messages Marked For
Deletion". This is as close as I have achieved to "natural" behaviour
with Outlook & IMAP.
Outlook doesn't seem to play very nice with a Real Mailserver (tm),
pulling tricks like saving sent messages in the local mailboxes
rather than "Sent Items" on the server. It does not seem possible to
deploy a IMAP server settings to Outlook using domain profiles, and
Outlook defaults to saving a set of "Personal Folders" in the local
profile (as opposed to the domain one), adding an additional
inconvenient step even when roaming is set up manually.
