If the bulk of your users are from a single domain, with vpopmail you can
dominate a default domain like this :
echo "yourdomain.com" > /home/vpopmail/etc/defaultdomain

If you are hosting many domains you have some other options as well :
If you bind multiple IPs to your mailserver and allocate 1 IP per domain,
Courier-IMAP/POP3 can then append a default domain if the user hasn't
supplied one.

If you are using the qmail-pop3d, then you can use vpopmail's "vipmap" tool
to map default domains to IPs.
