There's no such thing as "PROXYAUTH" in IMAP. You are obviously referring to a label, or a method, used by this Perl module to implement something that's called something else, in IMAP.

While I am able to connect as a user via Mail::IMAPClient to Courier I am unable to get the PROXYAUTH method to work. I have tried connecting both as "root" and "courier". If I connect as a user then I can read their mail.

  An obvious question is what user I should connect as?

I think I know what you're referring to, and Courier does not implement this optional IMAP function.
