Thunderbird by default attempts to make 5 IMAP connections to the server 
(one per folder you click on).  Courier, by default, allows 4 imap 
connections per IP address.  These two settings obviously conflict with 
each other.  You can reduce TB's max connections by going to Tools -> 
Account Settings, Server settngs, Advanced, "Maximum number of server 
connections to cache.  You can change the Courier default be editing 
/etc/courier/imapd and setting MAXPERIP to a greater number.

Modify your Maildir creation script to make them at the same time you 
create a new user's home directory, etc.

maildirmake /home/jsmith/Maildir
maildirmake /home/jsmith/Maildir/.Sent
maildirmake /home/jsmith/Maildir/.Trash
maildirmake /home/jsmith/Maildir/.Drafts
...
