I never had problems creating folders and their subfolders... (some of 
the folders contain mail and still have subfolders) with courier-imap 
and thunderbird and outlook and kmail... etc. If you want, I can send 
you screenshots :)

so you probably have another problem. check your courier config and 
compare it to the default configuration (as distributed by courier 
authors, not by packagers). Or did someone patch courier...
