Unless you expect your primary to be routinely down for prolonged periods of time -- at least a day at a time, a backup MX will not gain you anything.
To turn one of your servers into a backup MX, remove the domain from locals or hosteddomains, and add it to esmtpacceptmailfor (if it's not there already). If you have an unusual DNS setup, you may also need to make an additional entry to esmtproutes.
