Only a last question: is this limit hardcoded in Courier IMAP or can it
be modified?

Courier-IMAP has a limit of 300 MIME sections, and a maximum of 20
levels of nested MIME sections.
One key difference between IMAP and POP3, is that mail processing with
IMAP is done on the server side, while POP3 is really nothing more
than a very simple mechanism to download entire messages, with all
processing shifted over to the client side.
Since IMAP is a shared server resource, reasonable limits must be
placed on each IMAP server process, for the obvious reasons. 300 MIME
sections per message is a reasonable limit.
If you need so many attachments, zip them together into a single file,
or something.
