Please clarify where the NAT is that you're talking about.
N.B. the OP did say "public IPv4 address of the remote client", so it
doesn't seem like the OP is trying to identify the client's LAN / NATed
IP address.
I did not see any indication that the OP had any form of NATing between
the Internet and the Courier IMAP daemon. Maybe I missed another
message describing that.
