The imapxfer program in the UW-IMAP utils tarball works wonders for this
(just migrated from Cyrus 2.0.9 to Courier today). The quickest way I found
to do it was to run both servers concurrently (but on different ports,
obviously), and then run 'imapxfer "{localhost}" "{localhost:1143}" (where
1143 is the port the "other" server is running on).
Makes folders, copies messages, the whole she-bang. It doesn't handle
migrating users, so you'll have to make sure users exist for Courier
already, but that's pretty easily automated with some quick shell scripting.
