I ordered a 128bit certificate and didn't have to do anything special. 
The process was rather like ordering a cert for apache, since they're
both using OpenSSL.

If you're at all familiar with OpenSSL, you can use
/usr/lib/courier/share/mkesmtpdcert as a guide for creating the CSR and
installing the CRT you get back from Verisign.

If not, I have a script that's a little more helpful in understanding
openssl.
