Right, if you're using Red Hat Linux, start Courier with:
service courier start
-- at least I think that's the right invocation; I don't use the full
Courier suite. Look in your /etc/init.d/ directory.

Do:
ps - auxww
instead.
Netstat will tell you if anything's listening on the appropriate ports
(25, 110, 143, 443 etc).
