Thanks to all so far for the info you've emailed me.
I've disabled sendmail and tried the perftest again on my test user
account.
This time, no undeliverable errors in syslog, which is better.
However, all those errors have been replaced with the following errors:

Mailq shows all my mail waiting in a deferred status. Nothing shows up
in the user's test or bounces maildirs. No zombie processes or anything
like that.
