You included the logs from the sending server and they do not indicate and problems on your side, the receiver simply never answered for 4 hours. Head over to the other (broken) box, run `telnet 127.0.0.1 25`, grep the logs for messages and make shure you started couriertcpd (aka esmtpd) with the correct arguments and no other application plays around on port 25.
