Thank you so much for your patience Sam. I've tried starting the 
daemon as root and as non privleged user and this is all i get:
# ./esmtpd start
Killed

 Nothing in the log files indicating why its getting killed. I tried adding 
~/courier/sbin to the path in ~/courier/etc/esmtpd thinking that might be 
why. I have a very barebones inetd.conf file, only ftp and telnet (for 
teesting and setup). does esmtpd require:
shell   stream  tcp     nowait  root    /usr/sbin/in.rshd       in.rshd


This brings me to another question, since this is basically a brand new 
install for the entire box, once its live ill be migrating to it from a live 
server, now would be a good time to switch to IMAP wouldn't it? I can 
can the esmtpd server then right?
