This is done by creating an account named 'alias' for the domain you want it
for. Note that is must be an actual account, it cannot be an alias.

I use this functionality myself, and I'm using courier with LDAP
authentication for multiple (hosted) domains.

In theory it should be possible to set the maildir to that of another
(normal) account, though I remember seeing some weirdness when I tried
this...
