We do virus scans on all of our incoming and outgoing mail.  You do it with
an external program which works as a mail relay.  Incoming mail is accepted
by the virus scanner, scanned, and then passed along to the mail server.  If
you want to scan outgoing mail, just tell your mail server to send all mail
to the virus scanner which can then scan and deliver the mail (or just set
the outgoing mail setting of your mail client to the virus scanner).

We use Norton AntiVirus for Gateways on an NT box.  There is a Solaris
version, but I'm not sure about any other flavor of Unix/Linux.

One word of warning about NAV for GWs, tho.  Their relay filters allow an
obscure form of relay to get through.  ORBZ found it and blacklisted us for
awhile.  Symantec doesn't seem inclined to fix the problem.  So this is
something to keep in mind if you have a NAV for GWs server which both
accepts incoming mail and sends outgoing mail.  We sidestepped the problem
by installing two servers.  One accepts incoming mail from the Internet, but
doesn't send anything out.  The other sends outgoing mail, but doesn't
accept anything coming in.
