Re-read what AUTH_REQUIRED means. It means that all email needs AUTH. I.e. if someone sends your server email, your server won't accept it without their MTA authenticating itself first. This isn't usually what you want.
The esmtpd-ssl will share a lot of settings with the esmtpd file, so for the most part you only need to set ssl-specific options there. Anyway, you haven't stated that you re-configured your MUA to use auth. Do that and then see what happens. -- The 5 year plan: In five years we'll make up another plan.
