That's what I did, or rather I did a 'sudo gmake install', and then 'sudo /usr/lib/courier-imap/libexec/imapd.rc start'. I can't seem to connect properly, or it won't accept my commands or something. Here's what a telnet localhost 143 outputs:
Trying 127.0.0.1...

INFO: LOGIN, user=user, ip=[127.0.0.1]
I tried pre-pending the commands with unique tags, i.e. '0001 LOGIN user password', but no go. The program responds with '0001 NO Error in IMAP command received by server.'
Any ideas about what's wrong?
