Most mail clients are fully capable of archiving sent mail automatically, in
this fashion.  Check the documentation for your mail client.
this includes 2 problems:

1) not all clients are capable of doing so (including microsoft outlook,
   only ms outlook express can - don't ask me, why!)
2) users are required to configure it - and are able to remove it from the
   configuration (and then accuse the sysadmin of having changed the
   config!)
Ok, then, exactly how do you propose to arrange to have the server telepathically determine that the client on the other side of the network connection has just taken a copy of the message from its memory buffer, and transmitted it via SMTP to another, unrelated server; then exactly what process do you propose to use to have the server automatically contact the client and arrange to download a copy of the same message, for the purpose of storing it into a folder?

Your only other option is, again, a client configuration: namely to configure the client to automatically BCC on all sent mail a local address that's set up to deliver to the sent archive folder.
