We have just migrated from Exchange to Sendmail+Courier-IMAP+ldap address book.
* Use Exchange administrator to dump a .csv file of your users.
* You can use a program called imapcopy to copy the exchange
mailboxes to your courier-IMAP server. Make all of the users in
exchange are enabled for the IMAP protocol before running IMAPCOPY.
* Don't expect a seamless migration - it took us(well me) a few
months to do this for our 70 users (dispersed over different
geographic locations) including installing and configuring the
IMAP client (we used mozilla - works nicely with IMAP and a LDAP
address book), training, etc. It was not a full time migration, it
took place among many other projects, but it still did take quite
a long time.
